In keeping with my Nutella craving the other day and subsequent to making my Fauxtella Spread I decided to also try and make energy balls that taste as close to the real deal as possible. Energy bites are a staple in my fridge these days. Its a little treat for me when I’m craving dessert, and the kids love them too, especially Magnus who is a big chocolate kind of guy.
The flavour turned out pretty dang close if I don’t say so myself and I hope you love them too! You could probably even roll them in a bit ov cacao or unsweetened coconut…but I like them plain just like this!
INGREDIENTS
12 pitted medjool dates
1 cup roasted and cooled hazelnuts (see this post and video for method)
1/2 cup semi sweet chocolate chips
1/4 cup hemp seeds
1/4 cup chia seeds
1/2 cup rolled oats
1 tbsp pure vanilla extract
pinch of sea salt
Place the hazelnuts in the food processor and process until smooth butter forms. Add the pitted dates, chocolate chips, hemp seeds, chia seeds, oats, vanilla and sea salt and process again until well blended and dough like. If its too runny, add 1/4 cup more oats and blend again.
Roll the dough into balls, place in an air tight container and place in the fridge or freezer. Enjoy!!!
