You guys know I made some significant lifestyle changes this past February. I started working out again and eating better after realizing that no time will ever be the right time to get healthy, and it’s something that needed to happen for both myself and my kids. You guys also know that I love cooking and I love food. I mean almost half the posts on this blog are recipes. From bread to salads, to cakes and pasta, I eat and love it all.
I don’t follow a meal plan, and with my busy life right now it wouldn’t be feasible either since the kids like different things all the time and I get bored of eating the same stuff. But what I did do is be more conscious of what I’m putting into my body and into our fridge. Instead of buying ready-made stuff, I make it so I know what goes into it. The boys love pasta…all pasta. And so do I for that matter. What’s not to love it’s delicious and easy to make too. The only difference is what I put into it now. I’ll make a big pot of it for the whole house, but I’ll mix up the kids’ dishes with plain marinara or meat sauce and then make mine with some veggies or lean meat.
When Philips asked me to partner with them this year to share some of their new kitchen appliances, I was so excited!! They’ve come out with some amazing gadgets to help make healthy home meals easy, and I’d actually had a few of them on my “wish list” for a while, so I couldn’t wait to get on board and share them with you too. You’ll see some of them throughout the year, but first up is their Philips Viva Pasta Maker.
I tried out the Philips Viva Pasta Maker this past weekend and LOVED it so much, I’ve used it three times since. It’s ridiculously easy to use, like you probably won’t believe just how easy. In just 18 minutes, you can have fresh, home-made pasta or noodles! You know EXACTLY what goes into the pasta you’re making, and the sky is the limit on what ingredients you use…I can’t wait to make some colourful pasta next actually. And…when it’s all said and done and the pasta is made, all the pasta maker parts are machine washable…which is key for me because I’m not a fan of washing more dishes than I have to. It also fits perfectly onto your kitchen counter without occupying a lot of space and has smart built-in storage for the power cord and shaping discs. It’s so so good!
The first thing I made was a fresh and healthy pasta salad, which would be PERFECT to add to your Mother’s Day brunch, and the leftovers (if there are any) are pretty spectacular too. Also what mom wouldn’t love a homemade meal on her special day?? I’m sick of brunch at a restaurant for Mother’s Day to be honest. It’s busy, the kids often lose their patience, and in the end I just rush through a meal to make it back home for a nap time that might not even happen. So, the past few years I’ve opted for a low key day with my family, my mom and my kids…at home. Time with them is really all I want anyways and maybe a meal that I don’t have to cook or clean up after.

1 cup of extra virgin olive oil
1 cup of grated parmesan cheese
2 cups of fresh arugula
3 garlic cloves
1/2 cup sliced almonds or walnuts…or both
1 tbsp fresh ground pepper
1 tbsp sea salt
To make, blend in a food processor and set aside.
2 cups of fresh pasta cooked al dente (I made mine with the Philips Pasta Maker)
1 cup fresh arugula
1 cup thin sliced radishes
1 cup roasted cherry tomatoes (I tossed mine in olive oil and roasted in the oven until they softened and turned slightly charred did this while the pasta cooked)
1 can of white Navy beans, drained and rinsed
1/2 cup of sliced almonds
Toss the pasta in the arugula pesto first. Add the rest of the ingredients and mix until just combined, or assemble like I did in the picture and let everyone help themselves.
Enjoy with a fresh mimosa, virgin or otherwise 🙂
