Healthy Curry Egg-White Salad Sandwich

I love egg salad…like more than the average person.  But trying to lose weight and egg salad which is traditionally made with mayonnaise, do not go hand in hand.  So I wanted to create an equally tasty variation on the traditional egg salad.  And so the healthy curry egg-white salad sandwich was born.  Served with a 1/4 whole wheat pita and a side salad topped with balsamic vinaigrette glaze, this delicious little morsel is only 295 calories and incredibly satisfying.

Want to make the best healthy egg white salad sandwich you’ve ever had??  Here are the ingredients.

5 hard boiled egg whites chopped

2 green onions chopped

1 ripe avocado mashed

1/3 of a lime juice

1 tbsp roasted red pepper hummus

1 tsp curry powder

Salt and pepper to taste

Mix, chill, serve and enjoy.

    I do a variation of this with 2 egss, 1 avocado and a touch a minced garlic. It’s my fav! I’ll have to try your variation :)
